Ingredients:
7 - 8 small potatoes
1 onion, chopped
3 to 4 pickles, chopped
3 hard boiled eggs, chopped
Dressing:
1 jar mayonnaise (250ml)
11/2 tbs mustard
3 tbs vinegar (i'm using white wine vinegar)
Salt & pepper
1 tsp sugar
How To Make:
- Lay the unpeeled potatoes in a cooking bowl, fill cold water just until the potatoes are well covered. Bring the water to boil, and then wait for another 15 minutes or more. Test with a fork or a knife, if it goes in easily then the potatoes are cooked. Drain the potatoes. Let it cool, peel & slice them.
- For the dressing: In a bowl combine the mayonnaise, mustard, vinegar, salt, pepper and sugar. Mix it well.
- In a salad bowl add the sliced potatoes, onions, pickles, eggs. Stir in the dressing.
