Garlic Bread



Ingredients:
1 ciabatta bread
1/4 cup olive oil
2 tbs butter, melted
5 or 6 cloves garlic
2 tbs fresh parsley, chopped
1 cup shredded mozzarella
Parmesan cheese, grated
Salt and pepper

Method:
  • Preheat the oven to 210 C.
  • Cut the bread into half.
  • In a food processor, add the garlic, melted butter, olive oil, fresh parsley, salt, pepper and puree until smooth. 
  • Smear the mixture in both sides of bread, put them back together. Wrap it with aluminum foil and bake it for 8-10 min.
  • Unwrap the aluminum foil, lay the bread on both sides up in a baking sheet covered with aluminum foil. Sprinkle the mozzarella and grated parmesan over both sides of the bread. Bake it for another 8-10 min or until it's golden brown.

Chili Con Carne



Ingredients: 
500 gram ground beef
250 gram red beans
1 can sweet corn (150 gram) 
3 tbs tomato paste
5 tomatoes, diced
2 cloves garlic, minced 
1 onion, chopped
500 ml beef stock (i mixed 500 ml water with 2 tsp beef stock powder)
3 tsp paprika powder
2,5 cm cinnamon stick
1 tsp chilli powder
2 tsp ground cumin
Salt and pepper to taste

How to cook:
  1. Heat the oil in a cooking bowl, add the onions and cook it until the onions soft. Add garlic, cook it until fragrant. 
  2. Add the beef, cook until its brown.
  3. Add tomato paste and diced tomatoes, let it cook for about 5 min. Then add the stock, paprika powder, cinnamon stick, stir it well. reduce the heat, let it stand for 30 minutes. Stir occasionally.
  4. Drain n rinse the beans then stir them into the cooking bowl, cook them for another 30 minutes, then add the corn. Let it stand for 15 min and add the rest of the ingredients and cook it for few minutes.
  5. Serve it with bread or over rice.

My Chocolate Chunk Cookies

Ingredients:
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1- 11/2 cups all purpose flour
1/4 tsp baking soda
Dash salt
1 or 2 milk chocolate bars, break them into small chunks.
1 cup chopped walnuts (optional)

How to bake:
  • Cream the butter and sugars until light and fluffy. Beat in the egg and vanilla.
  • Combine flour, baking soda and salt. Add to the mixture, beating well. Stir in the chocolate chunks and nuts (optional). Cover and refrigerate for 30 min. 
  • Preheat the oven 190 C 
  • Line a few baking sheets with parchment paper. Shape tablespoonfuls of dough into balls and place approximately 5 cm apart on the baking sheets. Bake it for 11 - 13 min or until golden brown. Remove to wire racks to cool.

Bavarian Potato Salad


Ingredients: 
7 - 8 small potatoes
1 onion, chopped
3 to 4 pickles, chopped
3 hard boiled eggs, chopped
Dressing:
1 jar mayonnaise (250ml)
11/2 tbs mustard
3 tbs vinegar (i'm using white wine vinegar)
Salt & pepper
1 tsp sugar

How To Make: 
  • Lay the unpeeled potatoes in a cooking bowl, fill cold water just until the potatoes are well covered. Bring the water to boil, and then wait for another 15 minutes or more. Test with a fork or a knife, if it goes in easily then the potatoes are cooked. Drain the potatoes. Let it cool, peel & slice them.
  • For the dressing: In a bowl combine the mayonnaise, mustard, vinegar, salt, pepper and sugar. Mix it well.
  • In a salad bowl add the sliced potatoes, onions, pickles, eggs. Stir in the dressing.

Fanny's Barbecue Ribs with Bavarian Potato Salad

I accidentally invented this recipe as i was trying to remember the taste of my favourite ribs back in Bali. In Ubud, Bali they have this small restaurant called Warung Nuri and they are famous for their ribs, my husband and i are often went there every time we visit Bali. My ribs came up really good, it was falling right off the bones on the first bite and sooo tasty!!


Ingredients: 
1 kg pork ribs
40 ml soy sauce
40 ml sherry
1 tbs vinegar
3 to 4 tbs sweet soy sauce 
1 tbs chicken stock powder
600 ml water 
3 cloves garlic, crushed
1 onion, cut into 4 pcs 
Salt and pepper

How To Cook:
  •  Preheat oven 180 ˚C.
  • In a big casserole dish or baking pan combine the soy sauce, sherry, vinegar, sweet soy sauce, chicken stock, water, garlic and onion. Mix it well.
  • Place ribs in the pan, bake it for about 21/2 hours or until tender. Baste the ribs every 30 min and turn them around after half time. 
  • Preheat a grill pan, grill the baked ribs for about 3 to 4 minutes, continue basting and turning  them with the remaining sauce. Serve them with some potato salad.
